Quick steps guide:
Separate egg whites and yolks.
Add sugar 1 to yolks, mix by hand, sift in flour. Also add other flavor ingredients at this step
Add sugar 2 to whites, beat until stiff peaks form
Add whites to yolk mixture in thirds.
